Born from decades behind the bar and in the kitchen, our pop-up is a love letter to hospitality. Helmed by two industry veterans with a deep passion for craft cocktails and fine dining, we create intimate, one-night-only experiences where every detail is intentional, and every guest is part of the story. We believe responsible business owners hold no secrets from their teams. From financial reporting, to payroll, to ownership income and expense, we believe it is the essential responsibility of owners to be fiscally transparent with their teams.


Innovation

Food and Drink have been bringing people together since the beginning of time, but in the world economy today, access to new ingredients and new combinations are still being explored. We are passionate about bringing innovation to pallets here at home.


Principles

Often, when faced with decisions, people choose what is easy or convenient or the least expensive solution. We believe in doing the RIGHT thing, even if it isn’t easy or convenient or cheap. As leaders, we hold our duty to our team very close. Each member of our team is an essential part, and we want them to have the best we offer them, even at our own expense.


Respect

We believe all people deserve respect. “The customer is always right in matters of taste,” is a quote often tossed around in restaurants. But too often staff are treated disrespectfully. When you join our club, it enters you into a handshake agreement: We will treat you like long lost family in our home, and we expect you to treat our team with the same respect.

Andy Hendrix

Founder, Bar team

Andy has over 25 years in the service industry and 15+ years in management.  He has assisted in opening 11 new concepts. He is passionate about creating an experience where craft cocktails are approachable and not stuffy, elevated, yet lacking pretensions.

Jon Fiedler

Founder, Bar Team

Jon has 15 years in the service industry (5 years in management) and has owned and operated his own bakery, in addition to assisting in opening 11 new concepts.  He is passionate about create a “no bullshit” energy where guests are treated like family members he hasn’t seen in too long. 

Cami Achterhoff

Kitchen Team, pastries

Cami may be newer to the food & beverage industry, but her love for cooking started at a young age. Speacializing in pastries and desserts, she quickly rose to become the pastry chef at Woodside Bistro, bringing her lifelong passion for baking to the forefront and delighting guests with her sweet creations.

Jessica Childers

Front of House

Jessica has over 20 years of experience in the food & beverage industry having worked as a server, bartender, and manager. Passionate about conneting with people, she thrives on creating memorable experiences by serving delicious food and ensuring every guest leaves with a smile.

Ricky Heinrichs

Founder, Kitchen Team

Ricky has 27 years of service industry experience starting at 17 as a dishwasher and working his way to Executive Chef in Dutch and Fine Dining restaurants. Ricky’s mission is to provide a meal to remember to each guest he serves.

Michael Trace

Founder, Kitchen Team

Michael is an industry veteran from the Chicago area. From bar food to fine dining and private events, he’s pretty much done it all. Driven by family and diverse background, he brings love and excitement to every single dish.

Emily Bush

Bar team

Emily has been in the food & beverage industry for over 10 years. She loves all things local and gets excited about being a part of something that fuels creativity. Her passion for the the industry is based in making new relationships and bonding over the best things life has to offer; crafted spirits and phenomenal food.

Joshua Saylor

Front of House

Josh has been serving/bartending for over 12 years. He believes his mission is simple: to help curate a new dining experience by offering a proper good time and lasting memories. His passion in restaurants is deep friendships and a love for the craft.

Jay Powell

Front of House

Jay has 40 plus years of experience working in the food and beverage industry. An ever-welcoming presence wherever he goes, Jay is always accommodating and almost never seen without a big smile on his face. His goal is to be a part of something new and inventive.
